For this week’s video, I decided to veganize a recipe from the PBS cooking show, Ciao Italia, with Mary Ann Esposito. To make my Comforting Italian Lentils with Vegan Sausage, I followed her recipe as closely as I could, using vegan Beyond Spicy Italian Sausage, and subbing in a few ingredients using what I had on hand. Overall, I loved this dish.

If I could make one suggestion for those of you who make this: Crumble the sausage, and cook it in small chunks. Remove the sausage and proceed with the rest of the recipe. Add the sausage back in at the very end, just before serving. Although the dish was fine as is, I actually prefer it served over polenta.
