Before I give you this recipe, I need to tell you a story.

I’m trying not to get all “woo woo” on here, but this story definitely has an interesting element of “woo woo” to it.

So…

Let’s rewind back to about a month ago.

A friend of mine and I decided to meet for coffee at a coffee shop across town. I would say that we meet up “semi-annually” to discuss life and adventures, but mostly, selfishly, I meet up with her so I can get some inspiration and direction in life. This friend, Jennifer, who I’ve knows since my first day of college back in ‘98, was the one who actually suggested that I create a blog, or some way to share my ideas with the world. That suggestion came just over two years ago. I went home right after that meeting and started an Instagram account called Monson Made This.

So, yeah, these coffee meetings with Jennifer have always been special and important to me and my creative endeavors. I was looking forward to our most recent meeting with more enthusiasm than usual because I was on summer vacation from work, and I was contemplating not returning to my teaching position in the fall. I wanted advice and some direction as to what I should do with my life.

It normally takes me about 20 minutes to drive to that particular coffee shop, but because I was too anxious to stay home and wait for our meeting time, I decided to just take the long way. In preparation for the trip, I downloaded an episode of a podcast called “Babe?” (which I found because of an interview they did with Ed Droste of Grizzly Bear) featuring an interview with my current social media obsession, Aunt Freckle.

Freckle talked about their life story and what inspired them, and throughout the interview, there was a lot of talk about Buddhist philosophy. Freckle spouted inspiring sound-bite after inspiring sound-bite, and I was hanging on their every word. Then Freckle mentioned the Law of Attraction and the genesis of that concept going back to group of deities known collectively as Abraham.  Freckle told of Esther Hicks, and her channeling of Abraham, which was documented on these “tapes”, which is how the world was made aware of The Secret… I know. I know.

I was fascinated by all of this, so I checked Spotify to see if it had any of these tapes. And it did. I began listening. A few minutes in, I was built up, willing to give this “manifestation” thing a shot, and so I said to myself, self, let’s make something happen today. Let’s see if this Law of Attraction stuff really works. I said, and I paraphrase, I will meet someone today at this coffee shop that will benefit the work I have been doing. Someone there today will be able to help me with making content.

Taking the long way didn’t actually take that long, and I was still early. I decided to just order a coffee and wait. The line was long, but I wasn’t in a hurry. I was in a new state of mind. I had opened myself up to possibilities. Abraham had encouraged me to surrender and allow the Law to work for me. (Too much?)

As I got about halfway down the line, the door to the coffee shop opened, and in walked Jackie Sobon from Vegan Yack Attack. I had been a fan of hers for many years. I had seen her on The Vegan Zombie a few years prior, and her website often came up when I Googled vegan recipes. She had recently moved to Las Vegas, and I got quite giddy when I saw that she had started following me on Instagram.

So, here she was. A vegan blogger and cookbook author, walking towards me, mere minutes after I had decided to give Abraham’s trick a try. Thinking about my message to myself, I stopped her as she walked by. I stuck out my hand, and introduced myself. She recognized me, and we had a very short chat. She needed to get in line, but she suggested that I get in touch with her, so we could meet for coffee.

My coffee date with Jennifer turned out to be as helpful as always, but the entire time we talked,  I couldn’t shake the crazy kismet I had just experienced

I messaged Jackie a couple of days later. We met for coffee a week after that, and had a nice four hour long chat about all things vegan and social media. She suggested we film a video together where we cook a recipe from her then soon-to-be released cookbook “Vegan Yack Attack on the Go!”.

A few weeks and a planning brunch later, we were ready to film. She came over. She was mauled by my pups. She, Ben and I chatted, and then we shot this video.

It was such an amazing experience knowing where it all started. From an intuition I had while driving across town sparked by an interview with Aunt Freckle, to a collaboration video that I get to share with y’all here.

Her cookbook is incredible. When I received my copy in the mail, I thumbed through the vibrant pictures (which she photographed herself), and placed sticky notes on all of the recipes I wanted to make. If you can believe it, she has a take on a BLT, but made with coconut bacon and fresh peaches. I can’t wait for that one! Her book is full of  recipes for single people, for batch cooking, for parties, for on the grill, or, as the title suggests, for on the go.

I got to pick the what we were going to cook together, and I went straight to her Cauliflower Curry Grill Packet recipe. It’s a super easy and full of healthy legumes and veggies. It’s a chop and toss kind of recipe. Just prep all of your ingredients and toss them with the spices;  fold them into foil packets, and then thrown them on the grill. They’re perfect for camping, or for bringing to a backyard bbq with questionable cooking surfaces. Grilling these packets in my backyard filled the air with the most satisfying savory curry smell. It was torture to have to wait until filming was wrapped in order for me to slather them with her cilantro yogurt sauce, and dig in.

Cauliflower Curry Grill Packets

Every summer, I make grill packets for friends’ barbecues. This way, you have a tasty and quick meal without worrying if the grill is clean. This packet is filled with curry flavor paired with a cool, herby yogurt sauce.

Ingredients
FOR THE YOGURT SAUCE:
  • 1 cup (235 ml) plain nondairy yogurt
  • 2 tablespoons (5 g) chopped cilantro
  • 2 tablespoons (5 g) thinly sliced scallions
  • 1 tablespoon (15 ml) lime juice
  • ½ teaspoon onion powder
  • ½ teaspoon lime zest
  • ¼ teaspoon salt
FOR THE CURRY CAULIFLOWER:
  • 1 pound (455 g) cauliflower florets, chopped into bite-sized pieces
  • 1 pound (455 g) russet potatoes, diced
  • 1 cup (140 g) chopped white onion
  • 1 cup (150 g) halved cherry tomatoes
  • 1 cup (150 g) green peas
  • 1 can 15 ounces, or 455 g chickpeas, drained and rinsed 15 ounces, or 455 g chickpeas, drained and rinsed
  • tablespoons (25 ml) melted coconut oil
  • tablespoons (10 g) curry powder
  • Pinch of salt
  • Dash of pepper
  • 1 tablespoon (15 ml) lemon juice
Instructions
TO MAKE THE YOGURT SAUCE:
  1. Place all the yogurt sauce ingredients in a small mixing bowl, and stir until combined. Refrigerate until ready to serve.
TO MAKE THE CURRY CAULIFLOWER:
  1. Preheat the grill to roughly 400ºF (204ºC). In a very large mixing bowl, place the cauliflower, potatoes, white onions, tomatoes, peas, and chickpeas. Drizzle coconut oil over the top of the veggies, and stir until coated. Add the curry powder and a pinch of salt and pepper, and stir again until evenly coated.
  2. Tear out 4 pieces of aluminum foil that are 12 x 18 inches (30 x 46 cm), and lay them out. Divide the curry cauliflower mixture between the 4 sheets, place it in the middle. Fold the two long sides in toward the middle, and fold the seam together until it hits the filling. Fold the two short sides in, twice, to seal the ends.
  3. Place each packet on the grill and cook for 7 minutes, flip them over and grill for an additional 7 minutes. Carefully, open one packet slightly, and poke the cauliflower and potatoes to see if they are tender. If not, cook until they are. Once cooked through, place the packets on a cooling rack for 5 minutes before opening and serving. When the packets are opened, squeeze lemon juice over each one, and top with salt and pepper. Serve packets alongside yogurt sauce and enjoy.
